Winter Low Income Home Energy Assistance Programs (LIHEAP) Begin Monday January 9, 2023 OZARK OPPORTUNITIES, INC. has announced that the Winter Non-Emergency & Crisis Energy Assistance Programs will begin Monday, January 9, 2023. The Programs’ goal is to assist low-income households cope with the high costs of fuel for heating their homes in the winter months. This is a one-time assistance payment per program and program year. The programs will run through April 30, 2023, or until funds have been exhausted. See below for contact information.

Time to jot down a few lines here at the end of the year. 2022 was pretty good to us at the Cannada house. We were blessed with the birth of a great grandson. He came a little early and spent some time in the hospital, but he has grown out of the pre-mee stage and is going strong.

Apple Butter Snickerdoodles

Ingredients 2 ¾ cups of all-purpose flour ½ teaspoon cream of tarter ½ teaspoon baking soda ½ teaspoon of salt ¼ teaspoon of ground cinnamon ¼ teaspoon of ground nutmeg 1 ¾ cups of sugar, divided ½ cup of unsalted butter, softened 1 large egg, room temperature ½ teaspoon vanilla extract ¾ cup apple butter 2 tablespoons ground cinnamon Instructions Whisk together flour, cream of tartar, baking soda, salt, ¼ teaspoon cinnamon, and nutmeg in a medium sized bowl until combined. Combine butter and 1 ½ cups sugar in a large bowl.

Late fall I had a serene late fall moment last night. As I went out with the dog around midnight I heard the geese fly over heading south and got to watch the first snow quietly fall as I listened to the geese. I may or may not have heard them earlier this fall, but I have been trying to. Several times I was sure I heard them but my hearing isn’t the best and then it was only to realize that it was my neighbors, the cows, causing a stir about something.

Thanksgiving is just around the corner so it’s time to plan our menu and go shopping. If you are planning on cooking a turkey, you will need to buy one to serve 1 lb. per person. Be sure and find the directions for the thawing time, this is very important because you want a well thawed turkey when ready to prep and bake. If you do not plan on stuffing the bird, may I suggest a flavorful alternative. Rub the inside of the cavity with salt and pepper. Then I like to take a medium onion cut in half, a lemon cut in half, a stalk of celery, 2-3 sprigs of fresh Rosemary or if you prefer 3-4 sprigs of thyme and place them inside the cavity. This will all be thrown away after the bird is cooked. I hope you all have a wonderful Thanksgiving and take a moment to remember all the many things we have to be Thankful for. Our Freedom, which so many people in this world do not have. The people who are living through the horrors of war. Let us be Thankful for the freedom and peace of our wonderful country.
